For the first week I dove right in and did 5 meals and 2 desserts. I was so excited to cook this week. We had so much food I felt bad, but I had to throw a lot of it away at the end of the week. I was like forcing family to eat it when they stopped by... So the first thing I changed for this upcoming week is how many meals I make. I have decided to do Monday and Tuesday, then Wednesday left over day because that is our busiest day. Then I'll make food on Thursday and Friday and left overs will be on Saturday. I usually am not home on Saturdays.. or we eat out in Boise while shopping!
So let's start talking recipes. To kick off this new adventure, on Monday I started with the Grilled Raspberry-Chipotle Pork Tenderloin. It was so juicy and tender. This was definitely a solid 5 stars from the family. Ivy even had a little bit! I was not prepared and did not marinade it for the 6 hours.. I did about 20 minutes and the flavors still shown through. I also was not going to stand outside in the 18 degree weather at a grill. So I cooked mine in a pan on the stove. It took a little bit longer than the 15 minutes recommended, but still quick and worth the wait!
For dessert I made Mina's Lemon Bars. These were to die for! I followed the recipe to the T and it came out beautifully. This was a solid 5 as well. Definitely making this again.
On Tuesday, I made tomato soup, from scratch!! I am so proud. I have never done that before. It was divine. I am not a huge fan of tomato soup, but her Tomato Basil Soup with grilled cheese was so delicious! It was a little sweeter than coming from a can, so I did add a little bit of garlic salt to try to cut it. It worked a little bit! This was scored as 4 stars, but as left overs I would have scored it as 5. Sometimes it just needs to ferment to make it even better!

On Wednesday we had Sour Cream Chicken Enchiladas. They were pretty good! We scored it a 4. I thought I had mozzarella, but it was like maybe 1/4 of a cup. So I think if we have more cheese, it would have been a 5. For the sides, we made her Mexican Rice. Again, I thought I had all of the ingredients, but I accidentally bought tomato soup in a can, instead of tomato sauce. It was okay... But definitely recommend following the recipe. It was kind of bland and could have used more seasoning. But my husband said the next day for lunch, he mixed the enchilada and rice together in a bowl and ate it that way. He said it was so much better than eating the rice as just a side. I did not get a picture of this one... I forgot. 😢
For Thursday's dinner, we ate Chicken(less) Spaghetti. I put less, because the chicken I had in my Walmart order was a lot smaller than I thought and I used all of the chicken in the enchiladas... But was still great! So was like a cheesy sauce with some peppers. I also hate mushrooms, so I opted out on those. The way I made it, scored a 4, so I am sure if you made it exactly like you should, it would be a 5 without a doubt. Unless you put mushrooms in. Then it will be a 1.....

Finally, Friday! This was a special day. I love the Winter Olympics. So we had a nice steak dinner with scalloped potatoes. The scalloped potatoes were great! I could not find Gruyere cheese. And honestly I don't think I know what it is. haha. So I used gouda. Don't know how close in comparison they are, but it tasted great! I used the marinade on her recipe Tenderloin with Pickled Jalapeno Sour cream for our steaks no where in town had beef tenderloin. So I will have to make it again. The pickled jalapeno sour cream was really good! I had to pickle the jalapenos a few days before so they were ready for Friday. It was pretty easy to make... I was just scared of touching them. So I wore my winter gloves with baggies on them. 😂 It was a great idea... Don't make fun of me.

To top off the week, I made the Spiced Pecan Pie. It was so freaking good! Totally would make this every day if I could. It was so simple. I did use her pie crust recipe as well. I didn't have the time to chill it, and it still turned out great. I stuck it in the freezer for like 10 minutes, and said, "Yep! That's good enough."
