Week 2!

I am doing pretty good! I have cooked every single weekday from this cookbook. I have only missed two nights so far since I have began my journey through Joanna's cookbook. We will definitely be gaining weight because each recipe makes so many servings! But it's perfect for lunches the next day... and some dinners for leftover day. One night my house was so clean, so I didn't want to mess it up. Instead we went out for Chinese. And it just wasn't good at all! I was sad I didn't just make my own dinner. The second time I missed dinner, I forgot how much I had planned after school so... Pizza Hut to the rescue. 

I am behind in posts. So.. I'll get caught up eventually. Conference week really wiped me out last week!

This past week I made the White Cheddar Bisque. It was so delicious. It was rich for sure. But so good. it scored a 5 in our home. It made like 8-10 servings. I had to bring some to work just so we could get rid of it! It was never ending. I apparently did not take a picture of this meal... It was white.... and creamy.... That's all.

For a smaller dinner with our left overs, we had the Egg Salad Sandwich. I love egg salad sandwiches anyway and this was just an elevated way to make them. It was so creamy and divine! This too scored a 5. 


Bow Tie Pasta was good. It scored a 4. It was cheesy. I am not a fan of artichokes, so I left those out. It was a quick easy dinner. Recommended for a busy night. 



So... The chicken pot pie. It was okay. It scored a 3. I have never been good at making chicken pot pie. The bread sank into the stew and it just didn't cook right. If I were to do it again, I would use southern biscuits as the top instead of the flattened croissant roll dough. It recommends making mashed potatoes as well from her recipe. It tasted good, just the dough wasn't cooked all the way through. 



The dessert I made this week was Aunt Opal's Banana Pudding. This might be my new favorite dessert. It was so rich and creamy... Now I want it right now just thinking of it. It was quick and easy as well. 


For the Super Bowl I made Party Queso. It made like 14 cups!! It says that on the servings, but I clearly didn't read that or I would have halved it. It was delicious!! I had to take some to work.. for like two days. I was a queso pusher for sure... And of course, I forgot to take a picture... 

Sunday was our anniversary, so I got up and made Nate some breakfast. I made the Savory Ham and Cheese Bread Pudding. It was so yummy. I am not a huge savory breakfast fan, but it was defintely a make again. I watch too much of Gordon Ramsey, and I know he would be so disappointed in my hollandaise sauce. I never knew what they meant that it "broke," until I made it myself. It definitely broke... I took the picture with my iPad, but it will not let me get it on my phone... So one day I'll post it!
